Baron West Indian Hot Sauce

Just got this from a friend last week when I presented him with one of my favourites. I’ve tried chili sauces with mustard in them before but never really got on with them. But the way that the mustard and the vinegar are added to this one works really well. The heat of the scotch bonnet peppers doesn’t hit you immediately but comes with a very short delay, long enough to experience the other flavours. I tried it with a simple cous cous salad that I made and it worked really well. The sort of waxy come creamy flavour of scotch bonnets I find a bit too heady and overpowering and certainly incongruous with the chili heat. But they’ve managed to pull it off in this sauce. They say it’s not but it’s not that hot. It’s just right.
